This beer has notes of chocolate, vanilla, pumpkin pie spice, dried figs & carrot cake.

This beer has notes of fresh baked apple pie à la mode & baked Alaska flambé supported by rich chocolate and vanilla from the prior bourbon barrel aging.

The extended aging allowed seasonal temperature fluctuations in the barrels to draw bold flavors from the oak that can only develop with time. The heat of the bourbon gave way to subtle caramel sweetness from the oak married with the bold flavors from two types of chocolate.

The 2019 vintage of Double Barrel Aged A Night to End All Dawns is our 12.4% imperial stout that initially spent over a year in bourbon and rye whiskey barrels. We then hand-selected the best of those barrels, blended, and aged further in bourbon barrels that had held Vermont maple syrup. The extended aging allowed seasonal temperature fluctuations in the barrels to draw bold flavors form the oak that can only develop with time. This beer carries notes of vanilla and coconut from the initial barrel-aging and hints of caramel and undertones of toffee from the next round of maple syrup barrel-aging.

Old Rip Van Winkle Double Barrel-Aged A Night to End All Dawns is a select blend of our richest Imperial Stouts. After tasting through our cellar, we selected a barrel blend aged for over 21 months from both Willett Bourbon and Buffalo Trace Eagle Rare Bourbon barrels. This blend was then racked into Buffalo Trace Old Rip Van Winkle 10 Year Bourbon barrels to be finished for an additional 11 months. The aging of this beer through nearly four seasons in some of the most highly acclaimed bourbon barrels has created incredible depth and complexity. Dense milk chocolate aromatics and notes of caramel, malted milk candies, baker's chocolate and crisp brownie edges compliment the refined well-aged bourbon profile.

A Night To End All Dawns - Triple Barrel-Aged Chocolate (2021)
Bourbon Barrel-Aged Imperial Stout
15.6% ABV
This 15.6% blend of massive barrel-aged imperial stouts first spent 21 months in Willet Bourbon and Rye Barrels. This initial extended aging allowed seasonal temperature fluctuations in the barrels to draw bold flavors from the oak that carries notes of vanilla and coconut. It was then racked into Alba Syrah Red Wine Barrels for 11 months, introducing notes of dark fruit, raspberry, and cherries. Finally, this blend went into Chocolate Liqueur casks to finish for an additional four months before extended cold conditioning prior to release. This massively flavorful triple barrel aged imperial stout was several years in the making. It brings aromas of chocolate covered cherries and complex flavors of coffee, chocolate, dark fruit, coconut, and oak with a surprisingly drinkable medium body from extended barrel-aging. A great beer to end the year.

A select blend of A Night To End All Dawns barrels including Widow Jane George Dickel 12-Year, Woodford Reserve Double Oak, and Elijah Craig Bourbon barrels with an average age of 20 months. This portion of the blend was then further conditioned on Wild Thai bananas, vanilla beans from Madagascar, and a blend of Maple & Cinnamon. Bananas Fosters French Toast pours with an attractive dark black mocha colored foam head carrying forth notes of bourbon-drenched cinnamon French toast, light chocolatey banana aromatics, and a textured mouthfeel combining for a bourbon-rich decadent yet balanced experience.

Bourbon Barrel-Aged Imperial Stout
12.2% ABV
A select blend of A Night To End All Dawns barrels including Widow Jane George Dickel 12-Year, Woodford Reserve Double Oak, and Elijah Craig Bourbon barrels with an average age of 20 months. This portion of the blend was then further conditioned on a heavy dose of toasted coconut and a unique blend of vanilla beans from the Cook Islands, Comoros, and Madagascar, before being finished with premium Bali roast coffee from our friends at Rook. This beer pours a dark roasty mocha color with balanced round flavors and aromatic notes of chocolate coconut cookies, nutty praline, and creamy sweet vanilla spice with complimentary coffee undertones and a velvety smooth mouthfeel and background bourbon aromatics.

Across The Galaxy
India Pale Ale
7.2% ABV
Across The Galaxy was brewed with a blend of Pilsner, White Wheat, Oats, and a touch of light crystal malts. It was hopped in the whirlpool with Riwaka followed by a heavy dry hopping of Galaxy, Riwaka, and HBC 586–a punchy blend of three of our favorite hops. Across The Galaxy pours a juicy pale orange color with an opaque level of haze and a forward hop expression of passionfruit, pineapple, and powdery sauv blanc undertones with a very low bitterness and soft profile.

Afterglow
India Pale Ale
6.2% ABV
Afterglow was the second batch of beer brewed when we opened in 2011. After a few years we stopped production to make room in the schedule for more Head High, but it's back. Afterglow was brewed with a blend of 2-row malts that are slightly darker and more flavorful than our house pilsner, and low-level caramel malts for a fuller mouthfeel and slightly sweeter finish. Afterglow was hopped in the kettle with Simcoe and Chinook and finished in the Whirlpool with Cascade. We used a classic West-Coast yeast at a lower temperature for a clean fermentation with low ester production to let the malts and hops shine. Afterglow was dry-hopped, over two additions, with Simcoe, Chinook and Cascade, followed by a second round with Citra and more Simcoe, Cascade and Chinook Cryo. Afterglow is a full-bodied IPA that pours a vibrant rose color that replicates the color of the sky after the sun goes down. It drinks with hoppy notes of orange citrus, pineapple, grapefruit and a hit of piney resin—all perfectly balanced by a subtle malty sweetness.
