Strawberry & Cherry | 2021 Harvest
Spontaneous
Strawberry & Cherry | 2021 Harvest is a blend of traditionally brewed spontaneously fermented beers across two brewing seasons, with the oldest portion brewed in 2019. A portion of the blend was aged in one of our foudres. In the late spring, we picked up fresh, overripe strawberries from one of our favorite farms in South Jersey and squished them by hand into the blend for a short period of contact at a rate of 8 lbs per gallon followed by extended oak aging. In June, we received Montmorency cherries and added to a portion of strawberry spontaneously fermented beers at a rate of over 2 lbs per barrel. At bottling, this beer had an average age of 34 months and has been conditioning with young spontaneously fermented beer since its bottling in 2022. Strawberry & Cherry | 2021 pours a ruddy orange with aromatics of strawberry preserves and cinnamon, and flavors of cherry and strawberry rhubarb pie.

Strawberry & Elderflower | 2022 Harvest
Spontaneous
Strawberry & Elderflower | 2022 Harvest is a blend of traditionally brewed spontaneously fermented beers across two brewing seasons, with the oldest portion brewed in the Spring of 2019. In early June, our team went out to one of our favorite Central Jersey farms to hand-harvest elderflower before destemming it and soaking it cold overnight in the blend. This portion of the blend was then laid down in cask to mellow. Just after harvesting elderflower, we received our harvest of overripe New Jersey strawberries that were hand-crushed and added directly to the same blend at a rate of 8 lbs per gallon. Just prior to bottling, our team tasted through the barrels and created a blend of equal parts strawberry spontaneous and elderflower spontaneous to highlight the complexity of the two harvests. At bottling, this blend had an average age of 48 months and has been conditioning since its bottling in 2023. Strawberry & Elderflower | 2022 Harvest pours a salmonberry pink color with aromatics of perfumey lychee and floral bouquets balanced by an underlying strawberry sweetness, Turkish delight and rosewater with a very well-integrated acidity

Strawberry | 2019 Harvest
Spontaneous
Strawberry | 2019 Harvest came from a single cask of traditional spontaneous beer brewed in the Fall of 2018. At eight months, the beer was racked onto hand-crushed New Jersey grown overripe strawberries. The beer rested on both the strawberries and their stems for a week, before being racked back to oak to condition for an additional five months before blending. We then laid the beer down in bottle for an additional 18 months. Upon release, Strawberry | 2019 Harvest was 31 months old. Strawberry | 2019 Harvest pours with a brilliant rose color and bright aromatics of strawberries and a floral character that jump out of the glass. The fruit is again present in the flavor and provides a complexity in acid profile with notes of lemongrass and underlying funk and citrus from our spontaneous beer.

Strawberry | 2022 Harvest

Strawberry | 2022 Harvest was blended across two brewing seasons of traditionally brewed spontaneously fermented beer, including a portion of 4-year-old beer. In early June of 2022, we traveled to South Jersey to pick up several hundreds of pounds of overripe strawberries. Our team hand-crushed the strawberries and added them directly to the blend in stainless for a short juice extraction at a rate of 8 lbs per gallon before refermentation in oak. At bottling, this blend had an average age of 48 months and has been conditioning since its bottling in 2023. Strawberry | 2022 Harvest pours a burnt orange with aromatics of strawberry candy cereal and juicy strawberry gushers with flavors of strawberry lemonade and a balanced but complex acidity.

Summer Share
Cold IPA
6.8% ABV
This year's batch of Summer Share, our 6.8% Cold IPA, is brewed with Pilsner, wheat and rice. We hopped it with Waimea in the kettle, Strata in the whirlpool and a fair share of Nectaron, Waimea and Strata in the dry-hop. Summer Share was lagered with our house lager yeast for about one month prior to packaging. This Cold IPA pours a light straw golden color with west coast flavors of pine, citrus and peach with a hint of pineapple.

Sunday Brunch (2023)
Imperial Milk Porter
9.2% ABV
Sunday Brunch is brewed with maple syrup, cinnamon, Rook Coffee, and lactose. It is brewed with a blend of pilsner malt and English crystal and roasted malts. Sunday Brunch pours a black color with light coffee foam. Aromatics are of freshly roasted coffee and maple-drenched french toast. Sunday Brunch drinks are smooth with a rounded body and intertwined notes of coffee, maple, and cinnamon.

Sunrise Island
India Pale Ale

First brewed in 2021, this batch of Sunrise Island is hopped with Mosaic and Simcoe in the whirlpool and dry-hopped with HBC 586, Nelson Sauvin, Simcoe, and Galaxy. This thoughtful blend of classic and new American hops with two of the most popular Southern Hemisphere hops creates a unique and flavorful IPA. Sunrise Island pours a hazy pale orange with notes of peach rings, citrus and light pine.

Světlé 8° was cold fermented, naturally carbonated and lagered for 5 weeks before packaging. Světlé 8° is supremely crisp and drinkable with bright, refreshing notes of fresh bread and subtle lemon, making this pale lager a great choice for a highly sessionable lager.

Symphony at Sea - Old Fitzgerald
Bourbon Barrel-Aged Imperial Stout

Symphony At Sea—Old Fitzgerald Bourbon Barrel-Aged is a 14.7% bourbon barrel-aged Imperial Stout brewed with maple syrup, aged in Heaven Hill Old Fitzgerald Wheated Bourbon barrels for 27 months. Symphony At Sea—Old Fitzgerald pours jet black with a tan foam with aromatics of dark chocolate, freshly roasted coffee and flavors of chocolate fudge, maple syrup and chocolate covered raisins.

The Honey Eater
Double Barrel-Aged Barleywine
14.6% ABV
The Honey Eater was brewed in collaboration with our friends at 3BR Distillery. This beer was selected from a batch of long-boiled barleywine aged for 29 months in a single Buffalo Trace Stagg Jr. barrel before being double barreled in a honey spirit cask from 3BR. The distillate previously aged in the honey barrel came from Miombo Tanzanian honey that was fermented, distilled and then aged in oak for six months. The Honey Eater pours mahogany with a luxuriously thick mouthfeel and aromatics of toffee, caramel and dark stewed fruits. This beer finishes with subtle notes of honey jack and a light floral component.

The Time Has Come - Honey Vanilla (2021)
Bourbon Barrel-Aged Imperial Stout
14.3% ABV
This 14.3% variant starts with the Four Roses base, but we blended in a small portion of an Imperial Stout from a Willet Rye barrel that we used to age honey in house. We then conditioned it on Tahitian, Madagascar, and Mexican vanilla beans.

Third Reef
Triple IPA
9.7% ABV
Third Reef is hopped in the Whirlpool with Amarillo before getting a massive dry hop of Citra, Waimea, Galaxy, Nectaron, Riwaka, and Amarillo. Third Reef pours with a deep orange haze and brings bright aromatics of fresh citrus, peaches, and tropical fruits, resulting in a bold, juicy triple IPA.

THIRD | Anniversary Blend
Spontaneous
THIRD was blended to commemorate our Third Anniversary. The components of this beer were brewed between our Fall 2018 and Spring 2020 brewing seasons. These batches included the addition of New Jersey Blueberry Blossom Honey to the coolship and were bottled with a small portion of young spontaneous beer for conditioning. THIRD had an average age of 27 months when it was then blended with a small portion of young spontaneous beer and bottled in February 2022. After a period of further bottle conditioning, THIRD is ready to enjoy. THIRD pours with high carbonation and a tight foam head with a burnt orange honey color. It features a soft and balanced acidic profile with notes of citrus and honeysuckle, a light brettanomyces character and a crisp, dry finish.

Through the Empty Space
Oatmeal Stout
7.4% ABV
Through The Empty Space was brewed with British base malt, roasted barley, and chocolate malts for added character. We also added medium caramel malts to the grist for enhanced sweetness. Through The Empty Space was hopped in the kettle with unique English hops, EKG and Fuggle. Through The Empty Space is a full-bodied and smooth Oatmeal Stout, pushing notes of chocolate and coffee.

Barrel-Aged Imperial Stout

Tide & Timber is our Barrel-Aged Imperial Stout brewed in collaboration with our friends at Esker Hart. Tide & Timber is brewed with a base of Maris Otter, British and German specialty malts and a massive dose of maple syrup and molasses. Tide & Timber was aged for a total of 23 months in both Heaven Hill bourbon and Woodford Reserve Wheat whiskey barrels before blending.

Tide & Timber Banana Walnut Cookie is our 11.2% Barrel-Aged Imperial Stout aged in a blend of Woodford Reserve Double Oaked bourbon, Heaven Hill bourbon and Woodford Reserve Wheat Whiskey barrels for a total of 23 months, then conditioned on wild Thai banana, cinnamon and freshly toasted walnuts.

Tide & Timber Black & White Cookie is our Barrel-Aged Imperial Stout brewed in collaboration with our friends at Esker Hart. Tide & Timber Black & White Cookie was aged in a blend of Woodford Reserve Double Oaked bourbon, Heaven Hill bourbon and Woodford Reserve Wheat Whiskey barrels for a total of 23 months, then conditioned on vanilla beans from Madagascar and Comoros as well as cacao nibs from Ecuador and a large dose of graham crackers.

Tiny Shells, our 4.4% Hoppy Session Ale, is hopped with Citra and Simcoe in the Whirlpool, then dry hopped with Chinook, Simcoe, and Citra, providing bright hop aromatics and flavors of peach fruit cups and powdery mango. Tiny Shells, with its juicy aroma, pours a hazy pale yellow color and drinks with an extremely soft mouthfeel and low bitterness – all in a low ABV package.

Czech-Style Dark Lager
4.8% ABV
A more sessionable version of our Czech-style Dark Lager, Tmavé 13°, Tmavé 10° uses a multi-step mash and floor-malted Bohemian Pilsner and Bohemian Dark Munich. Tmavé 10° is hopped with Czech Saaz and fermented with our house lager yeast. It's then spunded for natural carbonation and cold conditioned for six weeks. Tmavé 10° pours a deep amber with a creamy, tan head, pushing notes of toasted bread, light toffee and a malty sweetness balanced by a restrained floral bitterness from the Saaz.

Czech-Style Lager

Previously named Hollow Sea, Tmavé 13° is a traditional Czech-style Tmavé Pivo brewed using a multi-step mash and floor-malted Bohemian Pilsner and Bohemian Dark Munich. It is hopped exclusively with Czech Saaz and fermented with our house lager yeast. It’s spunded towards the end of fermentation for natural carbonation before being cold conditioning for six weeks in stainless. Tmavé 13° pours a deep brown with a light tan head. It carries a rich, malty sweetness with flavors of fresh baked bread, balanced by a floral hop-forward bitterness.

Tomorrow Is Already Here (2023)
Barrel-Aged Imperial Stout
14.1% ABV
This annual year-end release of Tomorrow is Already Here is an Imperial Stout recipe which began with an intensive double-mashing and extended-boiling procedure with a small portion of maple syrup added to the hot side. The blend was then aged for 14 months in Heaven Hill Bourbon barrels. Tomorrow Is Already Here features notes reminiscent of burnt brownie edges, rich chocolate nougat, and fruity soft caramelized citrus-chocolate on top of a big textured and plush mouthfeel all combining for an intense yet balanced composition.

Turtle's Board
India Pale Ale

Turtle's Board, our 7.8% IPA, is hopped in the whirlpool with New Zealand Nectaron and Mosaic hops, then dry-hopped with a blend of Nectaron, Waimea, Mosaic, and Simcoe hops. Turtles Board brings layers of citrusy pine, zesty lemon meringue, peach and stonefruit.

Two: Honey
Spontaneous
Two, inspired by Belgian Lambic blending tradition, is our first blend to incorporate multiple years of our spontaneous program in one bottle. Considered a two year blend because the oldest component is over 24 months, Two is comprised of three different barrels from the 2018 and 2019 spontaneous seasons. At the time of bottling the average age of the blend was 20 months. The oldest component of Two was 26 months at the time of blending. This barrel was pulled from the first traditional batch we brewed in Spring 2018. Upon blending, the barrel brought a rounded, delicate profile with aged cellar aromatics from its extended aging that provides a base for the younger components to layer in fruitier top notes. The second component of the blend was 19 months at the time of bottling, the fourth batch of Fall 2018. This spontaneous beer was brewed with the addition of New Jersey harvested blueberry blossom honey. It brings floral and lemony citrus highlights. The final component was 16 months at the time of bottling, pulled from our fourth batch of Spring 2019. In this recipe, we increase the raw wheat percentage to 50%, with the remainder being malted barley. We also raised the hopping rate to increase the aging potential of the blend, lending a refreshing grapefruit pith flavor. The first blend of Two has aromas of apricot, peach and grapefruit along with Brettanomyces derived cellar character and a citrus flavor from our aged hops. It presents a depth in acid profile balanced by cream and caramel flavors from our all NJ grains and brewing process. At the time of release, the beer in the bottle had an average age of 30 months and should age well for years to come.
